On November 15, 2001, André opened the crown jewel of his culinary trilogy, Alizé, located on the top floor of the Palms Casino Resort. Named after the gentle trade winds that sweep the French Caribbean Islands, Alizé features world-class cuisine, service and wine list with the most dramatic view of the famous Las Vegas Strip. Alizé quickly became the talk of the town and has gained notoriety and accolades being named by Condé Nast Traveler Magazine as one of the top new restaurants in the world.
Alizé offers a 280-degree panoramic view—with the most dramatic perspective of the world famous Las Vegas Strip—from 16-foot floor-to-ceiling windows. A central focal point in the dining room is a two story-high “wine tower” housing over 5,000 bottles. Generously spaced tables are elegantly appointed with fine Italian ivory linen, Rosenthal stemware, fresh flowers and exquisite charger plates and china designed by Lesley Roy. Paintings by acclaimed contemporary artist, Loppo Martinez, compete with the spectacular real-life cityscape.
Above and beyond the spectacular view, Alizé’s two-story wine cellar is the focal point of the dining room. With over 1,700 selections and more than 7,500 bottles in inventory, Alizé’s wine program is second to none. Alizé’s bar may be petit and intimate, but there is nothing shy about the offerings of fine Spirits, Armagnac, Cognac, Port, Grappa and Madeira. With one of the most heralded collections of Cognac, Rochat, an avid collector presents several display cases of Cognac dating as far back as 1777, a personal acquisition from Jacques Hardy of Hardy Cognac’s private paradise.
