At Evo Bistro, we feature wines from around the world that have been personally selected by our resident wine buffs. We also support small production, family-owned vineyards, and high- quality wines at price levels to fit any budget. Innovative Wine Tasting Evo goes above and beyond the concept of a traditional wine bar or tapas restaurant, offering guests an exciting new way to taste a variety of wines with their food. At Evo Bistro, guests can serve themselves from a list of over 50 wines available by the glass We offer the Evo Card, which works as a debit, to use with our automated wine tasting stations. Guests may insert their card, select a wine, and receive either a one ounce, three ounce, or five ounce pour. Individually price pours from wineries around the globe make for a truly exceptional experience! This try-before-you-buy model promotes education, socialization, and the means to taste an array of wines available on the market without breaking your budge.Traditional wine buyers purchase many of their wines simply based on recommendations from storeowners. Evo is now offering our guests the opportunity to taste and experience small amounts of wine before deciding on the right glass or bottle. The guests are the judges and are able to choose the wine thats right for them. Chef Driss repeatedly outdoes himself with the exceptional small plates coming out of our kitchen at Evo. From decadent ravioli to a succulent tagine, Driss never fails to impress even the toughest foodies. The Washingtonian describes it best: Sauted shrimp are garlicky and luscious. Garlic also perfumes a mini-casserole of baby clams steeped in butter, shallots, and white wine with bits of chorizo that add a jolt of heat. When the clams are gone, the crusty chorizo makes an equally fine bread topper. The same goes for the vivid jumble of green and black olives cradling spicy Moroccan sausages known as merquez. A spinach crepe spilling buttery lump crab and drizzled with vanilla-saffron sauce could be a multicultural mess. But the delicacy of the approach makes in one of the most engaging dishes on the menu. Fried tidbits are deftly done, be they Ping-Pongball- size croquetas of potato, chicken, and ham or crunchy rings and tentacles of calamari paired with harissa-spike aioli, the sort of condiment youll want to slather on everything.
