An elegant but casual 60 seat restaurant is split into two distinct rooms, both with warm earth tones. The main dining room has an open kitchen as its focal point, while the skylight room allows for a more relaxed atmosphere with the feel of patio dining in the comfort of the indoors. Great banquet seating and cozy armchairs complete the feeling of warmth and comfort.
Chef Alex Rotherham, a native of Vancouver, is proud to have developed his culinary skills right here at home. With over 18 years of kitchen experience, nearly 16 of those years were spent working in Vancouver. He received his formal culinary training at Vancouver Community College, and is a member of the British Columbia Chef’s Association.
The kitchen of Infinity proudly boasts the complete absence of a deep fryer. Many of our dishes are prepared in a combination convection oven/steamer, helping to provide healthier and more flavourful dishes. One such dish is our signature appetizer, Butternut Squash Fondue with garlic bread. The bread is baked in house from scratch daily, from Chef Alex’s own family recipe. The fondue is roasted and steamed simultaneously-the final product being very rich, hearty and yet refreshing at the same time.
Their signature dishes include a play on comfort items. They have a Warm Spinach salad with maple-wood smoked bacon, caramelized pecans, roasted crimini mushrooms and a sherry vinegar reduction; Sautéed Jumbo prawns with campari tomatoes, spinach and soba noodles in a Tequila corn broth; a very rich Chocolate Ganache Cake with Jagermeister gelato. Another unique element of Infinity is their homemade sodas from scratch, all using natural ingredients; their current list includes Cola, Lemon-Lime and Ginger, with more in the works.
The design of the Infinity dining rooms allows for great flexibility in the experiences provided. As well as having an intimate and certainly romantic setting; Infinity can accommodate large groups and business lunches, dinners, and meetings. The split design allows for a private room for up to 24 people. The room can be booked for all day meetings with food supplied.
