About the chef
Born and raised in the Epicurean mecca of Southern California, Chef Brian fell in love with food at a very young age. His parents can remember him devouring shrimp cocktail and creme brulee on the Queen Mary at the tender age of 3. Brian can recall toying with the plethora of cookbooks and notecards of old family recipes that filled his parents kitchen. He continued cooking and expanding his palette through grade school and high school. It wasn’t until after 3 years of college that Brian really began to pursue his passion for food and professional cheffing. In 2003 he enrolled himself at Le Cordon Bleu. Fresh out of culinary school and off his externship at the Irvine Marriott. Brian was ready and eager to begin his climb up the culinary ladder. In late 2004, Chef Kozak was hired by Bon Appetit, now Compass Group, to work under Chef Peter Alfaro – 4 years consecutive for the California Branch. Brian’s solid classic French foundation and passon for international fusion cooking kept him hungry to excel and grow as a chef. In 2006, he launched his catering company, Culinary Hierarchy, doing private catering for a wide range of clientele from San Diego to Santa Barbara. Missing the high adrenaline action of a commercial kitchen, Brian ventured to Colorado and put in a year at the Brasserie Ten Ten in downtown Boulder. In January of 2009, he met Raymond Boulos and together the two have not stopped their efforts in establishing Sage as the premiere dining experience in Whittier. Executive Chef Brian Kozak and his team of talented & trusted young chefs have a mission for Sage Restaurant and Lounge to intrigue, inspire, and thrill all those who walk through the doors of Sage with the finest and most unique cuisine Whittier has to offer.
