We are proud to offer the best selection of 100% agave tequilas in Chicago. From Blanco to Reposado to Anejo, we carry only the finest tequilas that set themselves apart from the ordinary mixto tequilas many people are accustomed to.
With the help of our good friend and tequila ambassador, Julio Bermejo of Tommys Mexican Restaurant in San Francisco, weve also developed a margarita that uses only the finest ingredients. We are not trying to imitate, but to duplicate the experience that so many have traveled around the world to be a part of. We start with two ounces of estategrown, handmade El Tesoro Platinum teguila, organic agave nectar and fresh, hand-squeezed Persian lime juice from Mexico.
To showcase our fine selection of 100% agave tequilas, each shot you order will be a 2oz pour, served in a tasting glass that will enhance the aromas, color, and taste. During each stage of tequila production, different techniques can be applied by the tequila maker for the final product to be unique. Some distilleries mature agaves for longer periods of time before harvesting, some cook them in huge stone ovens, called hornos, others in huge steam ovens or autoclaves. Yet others allow fermentation to take place in wood tanks or stainless steel, each impart their own special flavors. The most influential difference in the tequila-making process is whether or not the tequila has been exposed to oak. Blanco tequila is never aged and bottled soon after production. Reposado tequila has to be rested at least 2 months to a year in oak barrels or tanks, while Anejo tequila legally must be aged a minimum of one year, usually longer.
