Westcoast ingredients (from the local markets and waters of British Columbia) are fundamental in this innovative type of global cuisine. Chef Chris Whittaker and the culinary team have gathered recipes from around the world to create a style of food that is International yet friendly. It’s a balancing act. Diverse spices are introduced to simple ingredients and intricately presented to the diner. Entrées such as Butter Curry Scallops served with spinach and paneer pakoras, cilantro spouts and citrus chutney, Mole Tuna served with a Huitlacoche tamale and salsa verde, and Lamb Shank Navarin atop a root vegetables and sweet potato tian are featured on the dinner menu. Wine paring is also available for these entrée items. Tapas include a refreshing Prawn Ceviche Rojo with lime juice, roast tomatoes, garlic and plantain chips, Lemon Grass Squid Salad served with a tamarind jalapeno dressing and vegetable spring rolls, and Ginger Dusted Chicken Wings with a sweet chili dipping sauce.
Further, the focal point is the David Candy explosion-of-light fixture that gives the rush of a camera flash. “There is only one West End,” says interior designer Judy Henderson. “And the West End is a place where people encounter people. Everybody sees everybody. This is the feel we’ve recreated at Zin. It was designed for this neighbourhood – with a West-End edge, sense of fun, bent for what’s risqué. I love the metallic, polyester, brazen-orange drape that flows through the room. It adds mystery. You enter Zin and see obscured figures beyond the fabric under sexy low light.”
